The Crop Science Society of America recommends consuming pulses regularly for their protein, high amount of fiber, and ability stabilize blood sugar and reduce cancer risk (by as much as 40%!). Pulses are important for the soil, too, providing the earth with essential sugars needed to improve the soil for future crops.
